When you eat unhealthy food matters — not just what you eat
Your body processes the same food differently depending on time of day. What just happened
New research synthesis from Associate Professor Katherine Livingstone at Deakin University’s Institute for Physical Activity and Nutrition pulls together the chrononutrition evidence with a practical question most people have wondered about but rarely seen answered directly: is it worse to eat something unhealthy in the morning, or later in the day?
The answer is later in the day — the same unhealthy meal costs you more metabolically at dinner than at breakfast. That is grounded in how the body’s circadian rhythm governs metabolic function across the day.
This is not about breakfast being morally superior to dinner. It is about the body being a different metabolic environment at 7am than at 7pm — and the same food landing differently in each.
The both-and
The circadian mechanism — what’s well-established
Your body runs on a 24-hour circadian rhythm that regulates far more than sleep. It governs hormone secretion, gut motility, liver enzyme activity, and — critically — insulin sensitivity.
Insulin sensitivity is highest in the morning. This means that when you eat carbohydrates and the resulting glucose enters the bloodstream, the morning body can clear it efficiently: insulin works well, glucose moves into muscle, liver, and fat cells, and blood glucose returns to baseline relatively quickly.
As the day progresses, this efficiency declines. By the evening, the same glucose load produces a larger spike and a slower return to baseline — not because the food is different, but because the metabolic machinery processing it is operating in a lower-sensitivity state. The same burger, the same bowl of pasta, the same slice of cake: more disruptive metabolically at night than at breakfast.
Layer onto this the effect of eating close to bedtime: high blood glucose at night delays the release of melatonin and signals to the gut that the body is in a digestive rather than sleep state. The result is not just a metabolic cost but a sleep quality cost — and disrupted sleep, in turn, further worsens insulin sensitivity the next day. These effects compound.
Where the evidence is more contested
The BMJ analysis on meal timing and cardiovascular risk and eClinicalMedicine’s 2025 chrononutrition review support the broad principle but note that translating it into specific, durable dietary guidance is harder than the circadian mechanism alone would suggest.
Most meal timing studies are short in duration, involve highly controlled conditions, and struggle to account for real-world variables: shift work, family schedules, what constitutes “breakfast,” and the confounding relationship between late eating and lower diet quality generally (people eating late at night are often also eating worse food, not just eating good food at the wrong time).
Intermittent fasting — often described as an extension of chrononutrition principles — has a more contested evidence base. The Cochrane review cited by Livingstone finds mixed results, and skipping breakfast specifically has not been shown to reliably improve metabolic outcomes and may increase compensatory late-day eating. The mechanism argues against it even when some short-term studies show weight-related benefits.
The honest summary: the underlying circadian biology is solid; the ideal intervention design on top of it remains debated.
The food quality question doesn’t disappear
Timing adds a layer on top of food quality, it doesn’t replace it. Livingstone’s illustration is useful here: a brekkie burger (bacon, hash brown, beef patty, cheese, bun, and sauce) contributes around 36% of an average adult’s daily energy intake in a single meal — and more sugar than many sweet breakfast cereals. Eating that meal at 7am is better than eating it at 10pm from a metabolic processing standpoint, but it is not a good meal at either time.
The Nutrients 2025 review on chrononutrition notes that the combination of high food quality and appropriate timing is where the evidence converges most strongly. Protein-rich, high-fibre, lower-glycaemic breakfasts reduce hunger later in the day — meaning front-loading food quality also tends to reduce the late-night eating that creates the timing problem in the first place.

For a 45-year-old woman managing metabolic health — whether that’s weight, blood glucose, cholesterol, or energy — meal timing is one of the lower-effort levers available. It doesn’t require a new dietary pattern, just a shift in when the existing pattern lands.
The practical translation from the research is modest but concrete: eat most of your food earlier, keep evening meals smaller and lower in refined carbohydrate, and don’t eat within two to three hours of bedtime if you can help it. If breakfast doesn’t happen naturally, a small high-protein option is easier to sustain than a full breakfast and still shifts the circadian balance usefully.
What this is not: a reason to skip breakfast, a reason to pursue strict eating windows without medical supervision, or a replacement for what you eat. The circadian mechanism means timing matters — it does not mean timing is the main thing.
Verdict: maybe — the circadian basis for meal timing effects on metabolic processing is solid, but the magnitude of real-world benefit and the optimal intervention design remain actively researched. Worth incorporating as one lever, not treating as a definitive prescription.
